Super simple, your run of the mill energy bites! They are super quick to make, quick to eat, and easy to bring with you when you’re off for a hike, a day on the beach (although, maybe a little sticky for the beach) or are running out the door and just need a snack. You could spruce them up a bit and add some dried cranberries, cherries, or role them in shredded coconut. Sub in whatever you like – different nut butters, sesame or hemp seeds rather than chia; add chocolate chips if you want to go double chocolate! You go gurl, it’s your wulrd.

Makes approx 12 energy bites
Takes about 5 – 10 minutes to make and 1 hour to set
Ingredients
- 10 pitted medjool dates
- 2 tbsp peanut butter
- 1 tbsp chia seeds
- 1/8 cup cocoa powder
- 1/2 cup almond flour
Directions
- Add all of the ingredients into a food processor and combine until it forms a sticky cookie dough or thick brownie like batter. *If the mixture is too dry, add a little more nut butter.
- Spoon out a tablespoon of the mixture and roll into bite size ball, and repeat until you’ve used up all the mixture!
- Refrigerate the energy bites for 1 hour to let them set.
- Enjoy as a quick snack, breakfast on the go, or a little sweet treat after dinner.
