A new week, a new chocolate chip cookie! The peanut butter adds a bit of saltiness so these cookies have some great savoury-sweet thing going on. These are vegan and gluten-free and you can whip this all up in one bowl.

Makes 10-12 cookies
Ingredients
- 1/4 cup coconut oil
- 1/4 cup peanut butter
- 1/4 cup cane sugar
- 1/8 cup maple syrup
- 1 tbsp vanilla extract
- 1/4 tsp xanthan gum
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp arrowroot starch
- 1/2 tsp salt
- 1 cup brown rice flour
- 1/4 cup chocolate chips
Directions
- Preheat oven to 350 degrees F.
- Combine coconut oil, peanut butter, cane sugar, maple syrup, vanilla extract.
- Add xanthan gum, baking soda, baking powder, arrowroot starch, salt, and mix in with sugar/oil mixture.
- Mix in flour until dough forms.
- Add chocolate chips
- Scoop 1 tbsp of cookie dough, and roll into a ball. Place on baking sheet and flatten slightly with a fork.
- Bake for 12 mins.
- Let cool for 10 mins before removing from baking sheet.

Just want to know, I have never used arrowroot starch for cookies, any reason behind this?
